Linguistic diversity of the world
Two useful online resources listing the languages of the world and basic information about them are Glottolog and Ethnologue: Languages of the World; note that for Ethnologue you need a subscription if you want more than just basic information on a language. The information in both of these resources is of varying degrees of reliability, depending on the information available about the language, and what is conveyed to the editorial team by experts.
Also relevant are World Atlas of Language Structures and Atlas of Pidgin and Creole Language Structures Online.
Fieldwork
Khinalug 2007: creating a digital portrait of an endangered language is a 20 minute video that provides some idea of what it is like to do fieldwork on an endangered language.
